Papa's Rum

Born of the finest rums, each is hand-selected from the Caribbean and Central, South, and North America. They are then married together in our proprietary solera blending process. Papa’s Pilar represents the original spirit of rum. Bold and well-traveled — just like Papa.

TASTING NOTES

NOSE: Rounded nose with citrus notes of grapefruit, mandarin, and key lime mixed with vanilla, oak and a touch of crisp almond.

TASTE: Creamy, buttery, vanilla taste. Layered with soft mango, orange peel and pineapple hints.

FINISH: Smooth, nutty, and clean.

Tasting Notes

NOSE: Complex notes of vanilla, cinnamon, coffee beans and honey with hints of sherry and port.

TASTE: Intricately flavored: sweet, mixed with earthy, vegetal tones. Mouth-coating with a touch of spice, bourbon, almond
and apricot.

FINISH: Robust with a long finish.

RUM SOURCING

Papa’s love for travel is well known. He spent months of his life traveling between Key West and Cuba on Pilar, collecting a wide array of friends and experiences. Papa’s Pilar captures this same spirit, bringing together some of the most sought after rums and blending them into a single pour.

We hand-select only the finest rums from throughout the Caribbean and Central, South, and North America based on age, character and maturity. We are currently sourcing from the rich regions within the Dominican Republic, Panama, Venezuela, and Barbados. We curate rums that are both pot and column distilled, and made from sugar cane or molasses. Our Master Blender hand-selects each sample to ensure ultra-premium quality, superior taste profile, and unique complexity.

SOLERA BLENDING

In addition to multi-sourcing, we reinstate practices that were applied to rum 85 years ago with our Solera blending process. A solera is a multi-staged process of aging and maturing rum, employing fractional blending for consistent high quality. Originally used by Spanish and Portuguese wine makers, specifically in the production of port and sherry, the solera allows us to perfectly blend younger products with older rums.

Barrels can be considered the soul of an aged rum so we select these just as carefully as we do our sourced rums. The layers within Papa’s Pilar proprietary solera include: American Oak Bourbon barrels, Spanish Oloroso Sherry casks, and Ruby Port barrels for our Dark rum.

AGE

The rums we curate are aged in their country of origin. Because we are continually searching for the best, the ages of the rums we select vary at times.

The rums in our Blonde expression have been aged up to 7 years, while the rums in our Dark blend have been aged up to 25 years. Our rums then further mature in the solera process. The numbers on the front of our bottle denote the solera profile.

FIRST CLASS TEAM

Lincoln Henderson friend of Papa’s Pilar and famed Master Distiller for Angel’s Envy, Woodford Reserve and Gentleman Jack, aided us in the creation of the original formula. Lincoln’s mastery is present throughout our unique process.

Papa’s Pilar is proud to have Master Blender, Ron Call, lead our rum-making team. With over 40 years of experience, Ron has created a host of award-winning spirits in the premium and super-premium categories, primarily whiskey and rum.
